Zucchini and Sweet Corn Baby Pancakes with Mild Oregano
Soft, nutritious, and allergy-friendly zucchini and sweet corn baby pancakes flavored with mild oregano. These Mediterranean-inspired finger foods are perfect for toddlers 12 months and older. Dairy-free, nut-free, gluten-free, and quick to prepare, they’re ideal for picky eaters, healthy snack times, and lunchbox ideas.
Ingredients
- 1 medium pcs Zucchini
- ½ cup cups Sweet corn kernels
- ½ cup cups Oat flour
- 1 tablespoon tablespoons Ground flaxseed
- 3 tablespoons Water
- 1 tablespoon Olive oil
- 1 teaspoon Mild dried oregano
- ½ teaspoons Baking powder
Instructions
-
Grate the zucchini using the fine side of a grater. Place grated zucchini in a clean kitchen towel or cheesecloth and squeeze gently to remove excess moisture.
-
In a small bowl, combine ground flaxseed and warm water. Stir and let sit for 5 minutes to thicken into a flax egg.
-
In a mixing bowl, combine the grated zucchini, sweet corn kernels, oat flour, baking powder, dried oregano, and the prepared flax egg. Stir well until a thick batter forms. If batter is too dry, add 1 tablespoon of water at a time until the desired consistency is reached.
-
Heat olive oil in a non-stick frying pan over medium-low heat.
-
Using a tablespoon, scoop batter and shape small pancakes (about 2 inches in diameter) onto the pan. Flatten gently with the back of the spoon for even cooking.
-
Cook pancakes for about 3-4 minutes on each side or until golden brown and cooked through. Flip carefully to maintain shape.
-
Remove pancakes from pan and transfer to a plate lined with kitchen paper to absorb excess oil. Let cool slightly to safe eating temperature before serving.
-
Serve as finger food for toddlers aged 12 months and older. These pancakes can be stored in an airtight container in the fridge for up to 2 days or frozen for up to 1 month.
