- 1 cup Water
- 1/2 cup Unsweetened apple sauce

- 3/4 cup Rolled oats
- 1/2 cup Whole wheat flour
- 1 1/2 teaspoons Ground cinnamon
- 1 teaspoon Baking powder
- 1/2 teaspoon Baking soda
- 1/4 teaspoon Ground ginger
- 1/2 medium Ripe banana
- 2 tablespoons Vegetable oil
- 1/4 cup Unsweetened plant-based milk

Preheat the oven to 350 degrees F (175 degrees C). Lightly grease a mini loaf pan or line with mini loaf silicone molds.

In a small saucepan, combine rinsed red lentils and water. Bring to a boil, then reduce heat to a simmer. Cook uncovered for 10-12 minutes or until lentils are very soft and most water is absorbed. Remove from heat and allow to cool.
